I have my plex server running nice. My son can access it from his mums etc , but i want to be able to access it and administer it from inside my local network and outside it.
I am running the latest Mac OSX with Sabnzb etc etc.

you don't need to administer it locally. plex.tv/servers will show yours once logged in.
To add files to your server you need to have a network drive/shared drive.. you need to have all your files on this drive and plex must be able to see it..
for instance i plugged a usb stick into my router.. and shared files from it.. i can see this stick from all of my machines..
i have 2 servers at 2 properties and can administer them from anywhere
I want to be able to move files about as the auto rename and move thing is not always accurate.

From outside your network? If so, you need to share your media folders. Then use an Dynamic DNS service like NO-IP and forward ports.... TCP/UDP 135,136,137 & 138 and 445.
Then you can access your files in Windows File Explorer using \\YOUR.EXTERNAL.IP.ADDRESS(or NO-IP ADDRESS)\Sharename\Folders\Files, ETC from anywhere.
You should also be able to MAP these as Network Drives too. I did this when I was working on a Project with an American friend and it seemed the easiest way to share files (before OneDrive and DropBox days).
This will then let you (so long as you have the correct permissions) move files and folders around.
This is not really recommended due to the security issues (I use it still), but others will suggest FTP or VPN access instead for your security.
All this aside, I'd suggest using Sickbeard/NZBDrone or CouchPotato instead. I've never had a problem with their renaming features.

What problems do you have with NZBDrone? All my shows get sorted perfectly. Are you using Drone Factory or Completed Downloading Handling (CDH)?
CDH interrogates Sab once a download has finished.
Drone Factory just keeps scanning the completed downloads folder for files.
CDH is the way to go at nowadays.
