Apple Pay will be launching in the UK on June 30th with support for the following banks/cards :

No mention of Barclays at all here, which is surprising!
You can use Apple Pay in stores with your iPhone 6 and 6+ or with Apple Watch (Which gives support to iPhone 5, 5c and 5s) Use of Apple Pay is also supported in App's with iPhone 6, 6+, iPad Air 2 and iPad Mini 3
It looks like you can use it anywhere that supports contactless for transactions for less than £20 (£30 in September), and for transactions over £20 it can be used in the following :

Boots
BP
Costa
KFC
Liberty London
Lidl
M&S
M&S Food
McDonalds
New Look
Post Office
Pret
Spar
Starbucks
Sub Way
TFL (Transport for London)
Waitrose
I would expect this list to grow over the coming months too as retailers can bypass the £20/£30 limit for Apple Pay should they want to
